Soak wooden skewers in water for 30 minutes (if using).
In a large mixing bowl, combine the ground beef, chopped onion, breadcrumbs, beaten egg, Nomad Kabob seasoning, salt, and pepper. Mix well with your hands.
Divide the meat mixture into 8-10 portions.
Take a skewer and flatten one portion of the meat mixture around it to form a sausage shape, leaving some space at the ends.
Repeat with the remaining meat mixture and skewers.
Preheat your grill or grill pan over medium-high heat.
Grill the kabobs for 8-10 minutes, turning them occasionally, until they are cooked through and lightly charred.
Serve the kabobs with a side salad or rice, if desired.
